Questions

Is this allowed alongside my PhD?

Check your program's rules. These are flexible, independent gigs.

No. Gigs use your expertise, never your lab's unpublished data or anything under NDA.

How do I get paid?

After each gig. Cookiy tells you how and when you get paid before you say yes.
